Instant Lemon Pickle
Pickles Are Very important part of Indian Meals.I make Sweet, Sour and Hot lemon pickle.
Ingredientsfor 20 servings
- 10 nos Lemon
- 1 tsp Ginger — sliced
- 1 tsp Garlic — sliced
- 6 To Small green chilly kandari mulaku
- 1/4 tsp Mustard seeds
- 1/2 tsp Fenugreek seeds
- 1/2 tsp Turmeric powder
- 3 tbsp Chilli powder
- 1 tsp Asafoetida powder
- Curry leaves
- 1/2 tsp Vinegar
- 2 pinch Sugar
- 3 tbsp Gingelly oil
- Salt, to taste
Preparation
Step 1
Wash the lemons and slice into small pieces.
Step 2
Pour oil into a pan and heat it and allow to crackle Mustard seeds, fenugreek seeds. Add ginger, garlic, small green chillies,[ you can use green chilly], curry leaves and cook it, stirring.
Step 3
Add turmeric, chilli and asafoetida powder,just cook it, stirring.
Step 4
Next, add sliced lemons and salt, mix it well. Close the pan with a lid and Continue cooking for 4 to 5 minutes.
Step 5
Finally add vinegar and sugar.Cook it until it get thickens.
Step 6
Let them get cool completely and store them in a bottle.this home made pickle anytime. Serve with rices.
Tip
Mustard oil needs to be heated to smoking point and then cooled before adding to the pickle. This removes its pungent raw flavour.
