Ingi Puli - Kerala Style
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 6 servings
- 2 cup Tamarind pulp (puli)
- Turmeric powder soak tamarind in water and extract pulp
- 1 inch Ginger slice the ginger into small pieces
- 1 cup Jaggery scraped
- Salt, to taste
- 1/2 tsp Mustard seeds
- 21/2 tsp Red chilly powder
- 1/2 cup Coconut — thinly sliced
- 1 tbsp Oil
Preparation
Step 1
Heat a Pot and cook red chilly powder for 2 minutes let the raw smell disappears.
Step 2
Add the tamrind pulp,Turmeric Powder,salt and allow the mixture to boil for about 5 minutes.
Step 3
At the same time fry the sliced ginger in 1 tsp of oil and grind the fried ginger pieces.
Step 4
Fry the thinly sliced coconut nicely in the same pan. Keep the fried coconut pieces aside.
Step 5
Add the fried ginger paste to the boiling mixture.
Step 6
Add the scraped jaggery and stir it well.Allow it to cook till the mixture thickens.
Step 7
Add the Fried Coconut pieces to the boiling mixture.
Step 8
Heat the oil in a pan and allow to crackle the mustard seed and add it to the above mixture.
Step 9
This dish will go fine with Rice,Biriyani.
