Idlis
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 6 servings
- 1 cup Idli rice Ponni rice
- 1/2 cup Parboiled rice
- 1/2 cup Raw rice
- 3/4 cup Whole black gram (Uzhunnu)
- 2 tsp Fenugreek seeds (Uluva)
- Water about 2 cups
- 2 tsp Salt
- Idli maker or idli moulds and cooker
Preparation
Step 1
Soak the ingredients together for about 4 - 6 hours.
Step 2
Wash well.
Step 3
Grind well in a mixer using little water.
Step 4
Rinse the mixer with water after grinding the whole mix and add this to the ground mix.
Step 5
Add salt(around 2 tsp) and mix the batter well with clean hands for about 5 minutes.
Step 6
Leave it to ferment overnight.
Step 7
Grease the idli moulds with little oil & pour one ladle of batter into each mould.
Step 8
Steam it for 5 - 10 minutes till the cooked smell comes out.
Step 9
Check for properly cooked idlis by pricking using a knife or fork. If it comes out clean, then the idlis are done.
Step 10
Serve while still hot with sambar and chutney.
Step 11
Can use the same batter to make dosa by adding a little more water.
