Idli Upma Easy
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 1 cup Black gram Urad dal (Uzhunnu)
- 3 cup Idli rava
- Salt, to taste
- 2 nos Onion
- 5 - Green chillies
- Curry leaves A, a few
- Oil
- 1 Spoon Sugar
- 1/2 Of Lemon
- 1 tsp Mustard seeds
- Asafoetida A pinch (Kayam)
Preparation
Step 1
Soak black gram for 1 hour and grind it.
Step 2
Mix 3 times idli rava and keep the batter for 8 hrs.
Step 3
Prepare idli from that rava.
Step 4
When idli becomes cold, smash it and make it as normal mixture.
Step 5
Set a pan over medium heat and pour in the oil or a kadai.
Step 6
Let the mustard seeds crackle.
Step 7
Add a pinch of asafoetida, curry leaves and green chillies.
Step 8
Add chopped onion and fry till they turn golder brown in color.
Step 9
Add idli mixture, salt, lemon juice and a bit of sugar.
Step 10
Mix it properly and keep it for 3 - 4 minutes to cook.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
