Idli | Soft Idlis
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 4 servings
- 1 cup Boiled rice
- 2 cup Raw rice
- 1 cup Urad dal parippu (Uzhunnu)
- 3 - Salt
- 1 tsp Fenugreek seeds
Preparation
Step 1
For preparing idli, soak boiled rice and raw rice together in water. Add fenugreek seeds.
Step 2
Soak urad dal in water separately.
Step 3
After 3 hours grind them separately.
Step 4
After grinding, mix both the items to make a batter (Kindly note that idli preparation can be made only after 6 to 7 hours of fermentation).
Step 5
Pour the batter in idli maker plates(idli tray). Oil the idli plate with gingelly oil if it is stainless steel.
Step 6
Steam the idli until done.
Step 7
Idli recipe, is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
