Idli Shaped Kallumakkai Ada
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 2 cup Rice flour
- 10 nos Mussels
- 2 nos Onion — chopped
- 3 nos Green chilly — chopped
- 1 tsp Ginger garlic paste
- 1 tsp Chilly powder
- 1/2 tsp Turmeric powder
- 1/4 tsp Garam masala
- Curry leaves, a few
- Coriander leaves, a few
- 2 tbsp Oil
- Salt, to taste
Preparation
Step 1
Clean and wash the mussels nicely.
Step 2
Cook the mussels in water with red chilly powder, turmeric powder, garam masala and salt to taste.
Step 3
Set a pan on the stove heat oil, put the chopped onion and cook well. Add ginger garlic paste, green chillies and cook well for 5 more minutes. Add chopped coriander leaves, curry leaves and stir in the cooked kallumakkai. Stir everything together thoroughly and take it off the heat. Set aside.
Step 4
Meanwhile, mix rice flour with salt and water as needed, knead the dough well. Take small balls out of this dough and make small discs by rolling out. Keep a small amount of the prepared kallumakkai filling in this ada, close it and roll into a idli shape.
Step 5
Get an idli maker, rub oil on idli plates and place the masala filled balls into the idli moulds. Press to get the correct idli shape. Switch on the flame and steam with covered lid for 20-25 minutes.
Step 6
Remove the cooked adas from the idli makers and serve hot. Idli Shaped Kallumakkai Ada is ready.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
