Idichakka Thoran/Tender Jack Fruit Stir Fry
Idichakka Thoran/Tender jack fruit stir fry is one such popular dish in kerala.It os a very simple recipe,jack fruit is cooked,then shredded and stir fried with coconut,some spices and served along with steamed rice.
Ingredientsfor 6 servings
- 1 small Idichakka
- 1 cup Coconut
- 1 Clove Garlic
- 2 tsp Cumin seed
- 3 Green chilly
- 1/2. tsp Red chilly powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Mustard
- 4 Dry red chilly
- Curry leaves little
- Salt, to taste
- 2 tbsp Oil
- 1/2 cup Water
Preparation
Step 1
Pressure cook the jack fruit with red chilly powder,turmeric powder,salt and water for 2 whistles.
Step 2
Mash the cooked jack fruit.
Step 3
Grind these ingredients for 3 seconds.
Step 4
Warm the oil in a kadai,allow to crackle mustard seed and add dry red chilly.
Step 5
Add cooked jack fruit.
Step 6
Add grinded coconut.
Step 7
Stir everything together thoroughly and Let it cook for 2 minutes.
Step 8
Idichakka Thoran/Tender jack fruit stir fry is ready to serve.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
