Idichakka Thoran | Tender Jackfruit Thoran
the stir fry prepared from tender jackfruit. You would have heard of jackfruits, a very popular product of Kerala. Jackfruits are seasonal available largely from November to June especially after heavy rains. But tender jackfruits, many are ignorant.
Ingredientsfor 4 servings
- 1/2 kg Tender jackfruit chopped into fine pieces, Idichakka
- 5 nos Dry red chillies (Kollamulaku)
- 1/2 tsp Turmeric powder
- Salt, to taste
- 1 cup Coconut — grated
- 3 nos Small onions (Kunjulli)
- 1 sprig Curry leaves
- 5 tbsp Oil
- 2 tsp Gram
- 1 tsp Mustard seeds
- 4 nos Dry red chillies (Kollamulaku)
- 5 nos Curry leaves
Preparation
Step 1
For preparing Tender Jackfruit Thoran, first grind together the red chillies and turmeric powder well.
Step 2
Cook the vegetable along with the ground mixture, salt and required water.
Step 3
When the jack fruit is cooked, mash the pieces.
Step 4
Grind together coconut, small onions and curry leaves.
Step 5
Warm the oil in a pan or a kadai.
Step 6
Add gram and mustard seeds.
Step 7
When the mustard seeds allow to crackle, add the red chillies and curry leaves.
Step 8
Add the jackfruit strands and the ground coconut mixture. Check for salt and add salt if it seems necessary.
Step 9
Cook the Stir everything together thoroughly in low flame.
Step 10
Cover the pan and allow it to cook. Remove the lid and let all trace of water evaporate in low flame. Remove pan from fire.
Step 11
Serve the delicious and nutritious dish with hot rice.
Step 12
When you use canned jackfruit, drain the water in it and run the vegetable through cold water. This will remove excess sodium.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
