Home Made Tasty Brain Roast
Kerala-style dry fry where mixed is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 6 servings
- Brain : 6 pieces
- Onion : 1 no
- Shallot : 5 nos
- Garlic : 3 nos
- Ginger : 1 inch piece
- Green chilly : 2 nos
- Curry leaves : 1 spring
- Chilly powder : 1 tsp
- Coriander powder : 1 tsp
- Turmeric powder : ½ tsp
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Slice onion and shallot in to small pieces.
Step 2
Heat a pan add oil to it and when it gets hot add onion, shallot, ginger garlic paste and green chilly, curry leaves to it.

When it gets brown add the powders.
Step 5
Give it a good stir.
Step 6
Cook it, stirring for 3 minutes and add little water to it.
Step 7
Next, add brain to it.
Step 8
Give it a good stir and close the pan.
Step 9
Allow it to get cooked.
Step 10
When it gets cooked transfer to the serving dish.
Step 11
It will take 30 minutes to cook.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
