Home Made Egg Masala
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 4 servings
- Boiled Eggs : 4 nos
- Onion : 2 nos (chopped
- Chilly Powder : 4 tsp
- Turmeric Powder : 1 tsp
- Salt, to taste
Preparation
Step 1
Boil the eggs. After removing the outer shell, mix them with 2 tsp of Chilly powder and salt.
Step 2
Fry the eggs in a low flame.
Step 3
Set a pan on the stove, heat oil and fry chopped onions until it starts turning brown.
Step 4
Add 2 tsp Chilly powder, Turmeric powder, the fried eggs and a pinch of salt. Continue cooking for 2 to 3 minutes.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
