Healthy Vada
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 4 servings
- 1 tbsp Rice flour
- 1 nos Egg
- 1/4 cup Carrot — grated
- 1/4 cup Cauliflower — chopped
- 1/4 cup Beans — chopped
- 1/4 cup Cabbage — chopped
- 1/4 cup Onion — chopped
- 3 nos Green chillies — finely chopped
- 1/2 tsp Garlic — finely chopped
- 1 tbsp Coconut — grated
- 1 Spring Coriander leaves — finely chopped
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing healthy vada, steam carrot, cauliflower, beans and cabbage till they are cooked.
Step 2
Knead onion, green chllies and garlic.
Step 3
Drop in the steam cooked veggies and egg. Knead it well.
Step 4
Drop in coconut, salt, coriander leaves, rice flour and required water. Mix it well.
Step 5
Make small patties out of the mixture and fry it in hot oil.
Step 6
Healthy vada`s are ready. Serve hot with sauce or chutney.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
