Healthy Tomato Salad
Tomato, grated coconut and other ingredients are mixed and seasoned.
Ingredientsfor 4 servings
- 1 cup Tomato — chopped
- 1 tbsp Peanut powder
- 1 tsp Coconut — grated
- 1 tsp Garlic — chopped
- 1/2 tbsp Coriander leaves — chopped
- Cumin seeds A pinch (Jeerakam)
- Mustard seeds A pinch
- 1 nos Red chilly — cut into pieces
- Curry leaves A sprig
- Sugar A pinch
- 1 tbsp Vinegar
- Oil, to taste
- Salt, to taste
Preparation
Step 1
Mix together grated coconut, peanut powder, vinegar, garlic, coriander leaves, sugar and salt together in a mixing bowl. Set aside for a few minutes.
Step 2
Chop the tomatoes in cubes. Add the above mixture into tomatoes. Heat the oil in a pan and allow to crackle mustard and add cumin seeds and red chilly.
Step 3
Add curry leaves and turn off the fire.
Step 4
Add above seasoning to the tomato mixture when it cools and serve.
Step 5
Healthy tomato salad, a favorite with kids as well as elders, is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
