Gulab Jamun
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 5 servings
- Maida (all purpose flour) : 2 cups
- Milk powder : one cup
- Oil — for frying
- Milk / Water, to taste
- For sugar syrup
- Sugar : 2 cup
- Water : one and half cup
Preparation
Step 1
Mix together maida and milk powder and make it to a chappathi type dough by adding water/milk as needed.
Step 2
Out of this dough make small balls.
Step 3
Fry the balls till it turns brown.
Step 4
Sugar syrup : Boil one n half cup of water in slight heat.5) As it bubbles add this sugar and heat until sugar completely dissolve. Dont overheat as sugar may get caramelized.
Step 5
Dip these fried balls in the sugar syrup for more than two hours and slightly cool it. For best result keep it overnight.
Step 6
Its mind popping serving gulab jamun as a sweet after heavy foods like biriyani.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
