Grilled Chicken-Spicy
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 6 piece Chicken legs with skins
- 2 tbsp Ginger paste
- 2 tbsp Garlic paste
- 1 tsp Light soy sauce
- 3 tbsp Fresh chicken masala
- Salt, to taste
- 2 tbsp Oil
- Sugar, a few
Preparation
Step 1
Prick the chicken all over with a fork.
Step 2
Mix all the above ingredients and rub into the chicken pieces. :- Leave it to marinate for 30 minutes.
Step 3
Preheat the oven grill.
Step 4
Line a grill pan with greased foil and lay the chicken legs on it.
Step 5
Grill till golden brown about 20 minutes.
Step 6
Turn over and grill the other side.
Step 7
Serve on a plate with lemon wedges,tomatoes and chutneys.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
