Green Peas Egg Masala Puttu
The breakfast that powers most of Kerala before 8 AM. Rice flour, grated coconut, and steam — nothing more, nothing less. The texture should be fluffy and loose, never dense or packed.
Ingredientsfor 2 servings
- 11/2 cup Puttu podi/Rice flour
- 4 tbsp Coconut — grated
- For Peas Egg Masala
- 5 tbsp Green peas soak overnight
- 3 Egg
- 1 large Onion
- 1 medium Tomato
- 4 Green chilly
- 1 tsp Ginger
- 1/2 tsp Turmeric powder
- 1/2 tsp Pepper powder
- Garam masala
Preparation
Step 1
Pressure cook the green peas for 1 whistle adding turmeric powder,salt and enough water.
Step 2
Warm the oil in a pan and add chopped ginger and onion.Let it cook for 5 minutes in low flame.
Step 3
Add tomato,green chilly and cook for another 2-3 minutes.
Step 4
Add cooked peas,pepper powder,1/4 tsp turmeric powder,salt and garam masala. Stir everything together thoroughly and add 2 eggs.
Step 5
Fold everything together gently and Continue cooking for 4 to 5 minutes.take it off the heat and set aside.
Step 6
To prepare puttu,take a bowl and add puttu podi,salt and little by little water till it becomes wet/moist and mix thoroughly without any lumps.Then take a puttu maker layer it with 1 tbsp grated coconut first,then the peas egg masala and the next with puttu podi.Repeat the process till the puttu maker is filled.fill the puttu kudam with 3 cups water and Bring to a gentle boil.place the puttu maker on its top and steam Continue cooking for 5 to 7 minutes.
Step 7
Now the Green peas egg masala puttu is ready.serve hot :-).
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
