Green Peas Ambat
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 3 servings
- Fresh green peas : 1 cup
- Potato cubed : 1 no
- Coconut : ½ cup — grated
- 2 nos Kashmiri chillies : 1
- 5 nos Spicy red chillies : 4
- Tamarind : 1 tsp
- Turmeric powder : ¼ tsp
- Salt, to taste
- Rye : ½ tsp
- Curry leaves, a few
- Oil : 2 tsp
Preparation
Step 1
Grind the grated coconut, tamarind, red chillies and salt to a fine paste.
Step 2
Transfer to a deep bottom pan and add water according to the consistency of the gravy / curry required.
Step 3
Add turmeric powder, fresh green peas and cubed potato to the masala.
Step 4
Enter Step.
Step 5
Put the lid on and cook the peas and potatoes in the masala till the oil separates and the vegetables are cooked. (Approximately 15 minutes).
Step 6
Heat the oil in a small pan and add rye. When it has allow to crackleed add the curry leaves.
Step 7
Pour the tempering over the curry.
Step 8
Serve while still hot with rice.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
