Green Masala Chicken Biriyani(Kozhi Biryani)
Green Masala Chicken Biriyani is a tempting amazing dish flavored with green masala ingredients. The main ingredient in the dish is the green or ‘hara’ flavored masala mixture.
Ingredientsfor 3 servings
- 1 kg Chicken
- 1 kg Basmati rice
- 3 Handfuls Mint leaves
- 2 Handfuls Coriander leaves
- 10 nos Green chilly
- 2 tbsp Curd
- 1 tsp Coriander powder
- 1/2 tsp Turmeric powder
- 1 tsp Garam masala powder
- 1/2 tsp Chilli powder
- 2 tbsp Oil
- 1 tbsp Ghee
- Salt, to taste
- 3 tsp Lime juice
- 3 nos Onion
- 3 nos Onion cut in roundels
- Food colour Lemon colour or Pista
Preparation
Step 1
For preparing Green Masala Chicken Biriyani, first grind the coriander leaves, mint leaves and green chillies with salt. Make sure the green masala is not over ground.
Step 2
Marinate chicken pieces with the masala paste, ginger garlic paste, coriander powder, chilli powder, salt, curd, turmeric powder, garam masala and 1 tbsp of oil. Keep chicken aside.
Step 3
Wash the rice and soak it in water for 1/2 an hour.
Step 4
Cook basmati rice in lots of water along with cinnamon, cloves, cardamom, salt and 2 spoon oil till its half cooked. Drain off the water and allow to cool.
Step 5
Heat equal quantities of oil and ghee in a pan.
Step 6
Add onion cut in roundels and fry till they turn light dark brown and remove it to a bowl.
Step 7
Add chopped onion and ginger-garlic paste in the pan containing rest of the oil. Stir till it becomes lightly browned.
Step 8
Add the marinated chicken pieces with the onion and stir for 3 minutes. Cover with lid.
Step 9
Avoid adding additional water.
Step 10
Allow to cook in low flame.
Step 11
Get a wide deep vessel.
Step 12
Put some oil and spread it all over the vessel.
Step 13
Add half of the cooked rice into the vessel and spread half of the cooked chicken layer upon it.
Step 14
Add light brown round shaped onions.
Step 15
Add some ghee and food colour mixed with lime juice over the rice. Repeat adding next layer of cooked rice on top.
Step 16
Cover with the lid and keep weight on the lid. Keep on a low flame for 10 minutes.
Step 17
Serve Green Masala Chicken Biriyani hot with raitha or curry.
Tip
The bottom layer of rice — the crispy, golden crust — is called the "thari" and is the most prized part. Cook on very low heat for the last 10 minutes to get it right.
