Green Beans Pickles
A tangy, spicy condiment that keeps for weeks and adds a sharp kick to any Kerala meal. Made with care and stored in a clean jar, this pickle gets better as the days pass and the flavours meld together.
Ingredientsfor 15 servings
- 500 g Green beans
- 1/2 inch Ginger — finely chopped
- 10 Cloves Garlic — finely chopped
- 1 tsp Fenugreek seeds (Uluva)
- 1 tbsp Chilly powder
- 5 nos Green chillies — chopped
- 1/2 tsp Turmeric powder
- 1/2 cup Vinegar
- 1/4 tsp Mustard seeds
- 1 tbsp Asafoetida powder (kayam)
- Gingely oil, as needed
- Salt, to taste
Preparation
Step 1
For preparing green beans pickles, wash the beans well and slice into small pieces.
Step 2
Mix some salt, turmeric powder and steam it. 3)Dry cook mustard seeds, fenugreek and cumin seeds in a pan. Grind it to a fine powder and set aside.
Step 3
Heat 2 tbsp of oil in a pan, add some mustard seeds & fenugreek.
Step 4
Next, add in the ginger, garlic & green chillies. cook it, stirring well.
Step 5
Add cooked green beans, chilly powder, turmeric powder, salt and add the previously powdered mustard mix.
Step 6
When the mixture cools down add vinegar.
Step 7
Note: 1)Store it in bottle and serve after 1 day.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
