Golden Lobster Fry
Slow-roasted in coconut oil with a generous hand of spices, this mixed fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 4 servings
- Lobster – 4 nos(de veined & cleaned), de
- Ginger paste
- 3 tbsp Butter
- Salt, to taste
- 3 tbsp Chilly powder
- 2 nos Onion sliced into small pieces
- 2 nos Tomato sliced into small pieces
- 1 bunch Coriander leaves/Spring onions
- Pepper powder, to taste
- 3 tbsp Lime juice
Preparation
Step 1
For preparing golden lobster fry, first heat butter in a pan.
Step 2
Add ginger-garlic paste, stir and after 2 minutes add sliced onion and tomato.
Step 3
When it becomes half fried, add chilly powder and stir for few more seconds till it gets golden brown.
Step 4
Add lobster and salt. Add water to cook the lobster. Put the lid on and cook.
Step 5
When done, add coriander leaves/ spring onions, pepper and lime juice.
Step 6
Coat well and serve hot. Golden lobster fry is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
