Godhumai Dosai
Golden-brown and lightly crisp, this dosa is the kind of breakfast that works on busy mornings and lazy weekends alike. The batter keeps well in the fridge for two to three days.
Ingredientsfor 2 servings
- 1 cup Wheat flour
- 1 nos Onion finely chopped, big
- 2 nos Red chillies (Kollamulaku)
- Curry leaves, to taste
- Baking soda A pinch
- Oil, to taste
- Mustard seeds A pinch
- Cumin seeds A little (Jeerakam)
- Salt, to taste
Preparation
Step 1
Set a pan over medium heat and pour in the oil or a kadai.
Step 2
Let the mustard seeds crackle and cumin seeds.
Step 3
Add onion, chillies and curry leaves and cook onion, till it becomes transparent.
Step 4
Mix wheat flour with water, until it gets a watery consistency.
Step 5
Add a pinch of baking soda along with the sauteed onions and Stir everything together thoroughly.
Step 6
Use this batter to make dosas.
Tip
A well-seasoned cast iron or non-stick tawa makes all the difference. If the dosa sticks, your pan needs more seasoning or the temperature is too low.
