Goan Vegetable Curry
Mixed vegetables cooked with ground onion mixture in a microwave.
Ingredientsfor 4 servings
- 2 cup Mixed vegetables carrot, french beans, green peas, cauliflower, potato
- 1 nos Onion — chopped
- 1 nos Green chilly — chopped
- 1/2 inch Ginger piece — chopped
- 1 nos Garlic cloves — chopped
- 11/2 tbsp Butter
- 1/2 tsp Garam masala
- 1 cup Coconut milk
- 1 tbsp Coriander leaves — chopped
- 1/2 cup Water
- Salt, to taste
Preparation
Step 1
First take half of the butter, onion, ginger, garlic and green chillies in a bowl and Stir everything together thoroughly.
Step 2
Fry it in a pan.
Step 3
Allow to cool. Make a fine paste and keep onion mixture aside.
Step 4
Put this ground paste and remaining butter in the pan. Cook uncovered for 3 minutes until moisture has dried up.
Step 5
Stir in the mixed vegetables, water and required salt.
Step 6
Put the lid on and cook for 7 minutes in 70% power. Stir in between.
Step 7
Remove bowl from microwave and add coconut milk. Keep stirring. Sprinkle garam masala.
Step 8
Place the bowl in microwave and cook for 1 minute in 70% power. Do not cook long since coconut milk tends to curdle.
Step 9
Goan vegetable curry is ready. Garnish with coriander leaves and serve hot with chappati/roti.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
