Ginger Cardamom Tea
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 2 servings
- 1 cup Milk
- Water, to taste
- Tea Leaves, a few
- 1 piece Ginger cut in small pieces
- Cardamom powder A pinch (Elakka)
- Sugar, to taste
Preparation
Step 1
Bring water to a boil and add ginger. Cook in low flame to bring out the essence of ginger.
Step 2
Add milk and allow to boil. 3)When it boils, add cardamom powder and tea leaves.
Step 3
Pour into a glass by straining and add sugar.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
