Ghee Roast
Ghee Roast also called as nei dosa is a tasty and crispy south Indian breakfast or main dish.It is a favourite dish for most kids. This can be served with varieties of chutneys and sambhar.
Ingredientsfor 3 servings
- 1 cup Black gram (Uzhunnuparippu)
- 2 cup Allpurpose flour Maida
- 1 tbsp Salt
- Ghee, to taste
- 1 cup Coconut
- 3 Or Green Chillies
- Ginger A small piece
- 1/2 tsp Salt
- 3 Pinches Mustard seeds
- 7 nos Curry leaves
- 1 tsp Oil
Preparation
Step 1
Soak black gram in water for 5 hours.
Step 2
Add enough water and grind it nicely so as to become a smooth paste.
Step 3
Add salt and leave it for about 7 to 8 hrs for fermentation.
Step 4
When fermented, add maida with enough water.
Step 5
Beat it nicely so as not to form clots and set aside for 1/2 an hour. The batter should be thick enough to pour it on the dosa tawa.
Step 6
Heat the dosa tawa and pour one ladle of batter and turn the ladle over the batter in three or four rounds so as to get thin crispy dosa.
Step 7
Spread ghee on sides of dosa.
Step 8
Roast dosa on both sides till slight brown on low heat.
Step 9
Remove onto a serving plate.
Step 10
For making chutney: 1)Grind together coconut, green chillies, ginger and salt to a smooth paste adding enough water.
Step 11
Transfer them into a bowl and add salt.
Step 12
Heat the oil in a small pan.
Step 13
Add mustard seeds and when it allow to crackles, add curry leaves.
Step 14
Pour this into the bowl and Stir everything together thoroughly.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
