Garam Masala Powder

Ingredientsfor 25 servings
- 30 nos Cardamom green (Elakka)
- 30 nos Cloves (Grambu)
- 6 piece Cinnamon Stick Karukapatta
- 1 nos Star Anise (Thakkolam)
- 1/4 cup Fennel seeds 4 tbsp
- 2 tbsp Black pepper
Preparation
Step 1
Heat a small frying pan and add all the spices, and fry for a minute or two. Then grind it to a fine powder in the small jar of your mixie.
Step 2
- I dont use the optional items mentioned to make garam masala powder. Instead used to grind it as separate powders.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
