Fried Spinach Potato
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 3 servings
- 4 nos Potatoes red/white)(chopped into 1/2" pieces, large
- Spinach chopped coarsely, Paalak (Cheera)
- 1/2 tsp Cumin seeds (Jeerakam)
- 2 nos Garlic pods — thinly sliced
- 2 nos Onions finely chopped, medium
- 3 nos Red chillies
- 1/4 tsp Red chilly powder — optional
- 5 tbsp Oil — for frying
- 5 nos Green chillies Thai
- 1/2 tsp Turmeric powder
- Salt, to taste
- 1/2 Of Fresh coconut — grated
- Or
- 5 - Dry grated coconut
Preparation
Step 1
Heat the oil in a medium non-stick pan.
Step 2
Add cumin seeds and garlic and fry lightly, until the garlic starts changing color.
Step 3
Add onions and red chillies and fry, till translucent.
Step 4
Add turmeric powder, chilly powder and salt to taste.
Step 5
Add potatoes and green chillies.
Step 6
Put the lid on and cook on medium low heat.
Step 7
Do not add water.
Step 8
Keep stirring the potato mixture in between, until thoroughly cooked.
Step 9
Add the spinach and mix lightly, until wilted.
Step 10
Add the coconut and Stir everything together thoroughly, until the mixture is dry.
Step 11
Goes well with rice.
Tip
