Fried Rice Rings
Kerala-style flavoured rice — each grain separate, gently spiced, and cooked until it is just tender. A squeeze of lime and a handful of fried cashews finish it off.
Ingredientsfor 5 servings
- Rice powder : 2 cup
- Maida : ½ cup
- Sooji (Rava) : ½ cup
- Salt, to taste
- Red chilli powder : 1 tsp
- Coconut : 1 cup — grated
- Cumin seeds : 1 tsp
- Ghee : 2 tsp
- 3 Stems Coriander leaves : 2 clean and cut them into small pieces
- Coconut / Refined oil : as reqd to fry the rice rings
Preparation
Step 1
Get the rice powder, maida and rava in a basin / vessel, and add ghee, salt, red chilli powder, cumin seeds and cut coriander leaves with it.
Step 2
Mix it well along with required quantity of water and make a dough of the mix and set aside for about half - an - hour.
Step 3
Apply some oil in the palm.
Step 4
Make small balls with the dough as shown in below picture.
Step 5
Then roll the dough balls like threads.
Step 6
Make small rings by rolling the dough on finger.
Step 7

Keep the rings ready to fry.
Step 9
Heat the oil in a frying pan and then put the rings part - by - part into the heated oil.
Step 10
When the rings are cooked well, take it out from the oil and keep it in an air tight jar /vessel.

Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
