Fried Lamb Ribs In Tomato Salsa
Slow-braised mutton in a rich, dark gravy fragrant with whole spices and curry leaves. Kerala mutton dishes reward patience — the longer you cook, the more the meat surrenders its toughness and takes on the masala.
Ingredientsfor 5 servings
- Lamb ribs : 9 nos
- Tomato paste : ½ cup
- Onion
Preparation
Step 1
Grind together ginger-garlic-green chillies, pepper corns, curd and mix it in lamb ribs.
Step 2
Add the mutton masala, garam masala and salt.3) In a grill pan, add little oil. Fry the lamb ribs in it till done.
Step 3
When done set aside.5) In a pan, add little oil. Fry garlic, onion, capsicum and green chillies.
Step 4
When they change color, add the tomato paste and cook again.
Step 5
Add little water and make this a thick masala.8) Before serving, add this into a serving plate.
Step 6
Next, add the fried lamb ribs above it.
Step 7
) Mix it together while serving.
Tip
Whole spices — cardamom, cloves, cinnamon — go in early with the oil. They need time to infuse their flavour into the fat.
