Fried Ladies Finger
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 2 servings
- 250 g Ladies finger
- 2 tsp Chilly powder
- 1/2 tsp Asafoetida powder (Kayam)
- 2 tbsp Gram flour Kadala mavu
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing fried ladies finger, first wash the ladies finger and cut it length wise.
Step 2
Marinate ladies finger with salt, chilly powder and asafoetida powder. Set aside for 3 to 5 minutes.
Step 3
Sprinkle the gram flour on top of it and shake it well.
Step 4
Fry in hot oil it in oil.
Step 5
Fried ladies finger, a Side dish is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
