Fried Ginger Garlic Pathiri
A flavorful, crispy variation of the beloved pathiri, a staple in Kerala cuisine.
Ingredientsfor 4 servings
- 11/2 cup Rice flour or puttu podi
- 1/2 cup Flour Maida
- 11/2 tsp Ginger garlic paste
- 1 nos Onion — chopped
- 2 tbsp Ghee
- 1/2 tsp Black seed
- Oil — for deep frying
- 11/2 cup Water
Preparation
Step 1
Heat ghee in a vessel and cook onion in it for 1 minute.
Step 2
Add ginger garluc paste and cook it, stirring again for 2 minutes.
Step 3
Add water, salt and black seeds. Bring to a gentle boil. Once it starts boiling, add flour into it. Mix it well with a spoon. Turn off the heat.
Step 4
Make a soft dough out of it. The dough should be soft but should not be watery.
Step 5
Get a portion, make balls and flatten it.
Step 6
Heat the oil in a vessel and fry in hot oil both sides until lightly browned.
Step 7
Fried ginger garlic pathiri is ready. Serve with non-veg curry or with kuruma.
Tip
Cook on medium-high heat, not scorching hot. You want the bread to puff and develop spots, not burn.
