Fried Beef Curry
A deeply satisfying fried beef curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 4 servings
- 200 g Beef
- 1 nos Onions — sliced
- 2 nos Green chillies — chopped
- 1/2 inch Ginger — chopped
- Vinegar, to taste
- Curry leaves A, a few
- Salt, to taste
- For the gravy
- 1 tbsp Chilly powder
- 1 tbsp Coriander powder
- 1/2 tsp Turmeric powder
- 1 tsp Black pepper powder
- 2 Cloves Garlic
- 2 nos Cardamom
- 1 inch Cinnamon
- 2 nos Cloves
- 2 nos Shallots/Small onions — chopped (Kunjulli)
- 11/2 cup Coconut milk 1st extract
- Coconut milk As reqd to — cook the meat, 2nd extract
- 1 tbsp Oil
- 1 nos Potato — sliced
Preparation
Step 1
For preparing fried beef curry, cut the meat into pieces. Now, use the back of the knife to beat the meat tender.
Step 2
Mix the meat with onions, green chillies, ginger, salt, vinegar and curry leaves. Set aside.
Step 3
Grind the chilly powder, coriander powder, turmeric powder, black pepper powder, garlic, cardamom, cinnamon, cloves and shallots to a fine paste.
Step 4
Add the spice paste to the meat.
Step 5
Next, add the 2nd extract coconut milk and pressure cook the meat.
Step 6
Warm the oil in a pan, fry in hot oil the potato and set aside.
Step 7
Now fry in hot oil the meat pieces in the same oil till it turns brown and set aside.
Step 8
To the same oil, add the meat gravy. When it turns brown in colour, add the 1st extract coconut milk and Stir everything together thoroughly.
Step 9
When the gravy is thick enough, add the fried potatoes and meat and cook for a minute.
Step 10
Fried beef curry is ready. Serve hot.
Tip
Thin strips cook faster and develop more crispy surface area than thick cubes. Cut against the grain for tenderness.
