Fresh Coconut Garlic Chutney
A quick Kerala-style chutney that comes together in minutes and adds a punch of flavour to dosa, idli, or just a plate of rice and dal. Grind it coarse for texture or smooth for dipping.
Ingredientsfor 4 servings
- 1 cup Coconut — grated
- 5 nos Garlic
- Ginger Small piece
- 2 nos Green chilly
- 1/4 tsp Mustard
- 1 tsp Oil
- Curry leaves, a few
- Water
- Salt, to taste
Preparation
Step 1
Firstly, in a blender add 1 cup grated coconut, green chilly, garlic, ginger piece, salt and water as needed.
Step 2
Blend it to a smooth paste. Add more water while blending if required.
Step 3
Heat the pan again on medium heat. Add 1 tsp coconut oil. When the oil turns hot, add 1/4 tsp mustard seeds. Fry mustard seeds until it starts to pop. Now, add 4 to 5 curry leaves and fry 2 minutes.
Step 4
Pour this tempering on the chutney and give a good mix.
Step 5
Chutney is ready to serve!
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
