Fluffy Omlette

Ingredientsfor 3 servings
- 2 nos Eggs
- 1 nos Onion — finely chopped
- 1 nos Green chillies finely chopped, Thai
- Curry leaves — finely chopped
- Ginger — finely chopped
- 1/2 tsp Turmeric powder
- 2 tbsp Fresh grated coconut
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing Fluffy Omelette, first take a medium sized bowl and knead onions with salt lightly, using your hands.
Step 2
Make sure that the salt is slightly more to incorporate the salt into your eggs also.
Step 3
Add curry leaves, green chillies, turmeric powder, ginger, grated coconut and beaten eggs.
Step 4
Mix lightly and set aside.
Step 5
Heat oil on a medium-low heat, in a pan.
Step 6
Pour the prepared omlette batter, cover the skillet and let it cook.
Step 7
Use a spatula to turn the omlette.
Step 8
Remove Fluffy Omelette from the pan, when lightly brown on both sides.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
