Fish(Aikura) Cutlet Fry(Meen)
Pan-fried until the edges go dark and crispy, this fish fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 1 servings
- 7 piece Fish Aikura
- 4 tsp Chilli powder
- 1 tsp Turmeric powder
- 1 nos Egg
- 1 cup Bread crumbs
- Salt, to taste
- Oil enough — for deep frying
Preparation
Step 1
Clean the fish and cut into round shapes.
Step 2
Marinate fish with 3 tsp of chilly powder, turmeric powder and salt for about 15 minutes.
Step 3
Add 1/2 tsp of chilly powder and some salt into the egg and mix it well.
Step 4
Dip each piece of fish into this mixture.
Step 5
Cover it with bread crumbs like cutlet preparation.
Step 6
Fry in hot oil in hot oil, till it becomes golden brown.
Step 7
Can be used even as a snack with tomato sauce.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
