Fish Paratha
Fresh fish cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 3 servings
- 1/2 kg Fish boneless — minced
- 2 nos Onion
- 3 nos Tomato
- 5-6 nos Green chilly
- 1 tsp Chilly powder
- 1 tsp Garam masala
- 10 Cloves Garlic — chopped
- 1 piece Ginger — chopped
- 4 tbsp Ghee
- Salt, to taste
- 1/2 kg Wheat flour
- 2-3 tbsp Coriander leaves
Preparation
Step 1
For preparing fish paratha, cook ginger and garlic in ghee. Add the minced fish to it and fry well.
Step 2
Add salt, garam masala, chilly powder to it and fry again.
Step 3
Next, add tomato pieces, green chillies and fry till the ghee clears.
Step 4
Add onion, coriander leaves to it and fry well. Let it cool. 5)Mix wheat flour with salt, ghee (as needed), water and knead well as for chappathi.
Step 5
Get a small sized ball out of the dough and press this ball by hand to make a small circle. Repeat procedure with entire dough.
Step 6
Spread the fillings on the circles and place another circle on top of the filling and stick the ends well. Roll on the paratha lightly using a chappathi roller.
Step 7
Heat 2 tbsp of ghee in frying pan and pan-fry the parathas on both sides. Serve hot.
Tip
Never stir a fish curry with a spoon. Shake the pot gently to coat the pieces — stirring breaks them apart.
