Fish Grilled With Sprout
Fresh fish cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 2 servings
- 200 g Fish fillets
- 100 g Sprouted green gram Cherupayar
- 50 g Green peas
- 1 tsp Fish sauce
- 1 tsp Lemon grass
- 1 nos Onion — grated
- 1 inch Ginger — grated
- 1/2 tbsp Lemon juice
- 1 tsp Mint leaves — chopped
- 1 tsp Coriander leaves — chopped
- Salt, to taste
Preparation
Step 1
Mix onion, ginger, fish sauce, lemon grass, lemon juice, mint leaves and salt together. Marinate the fish fillets in the mixture and set aside for 10 minutes.
Step 2
Cook the fish in a preheated oven in 300 F till both sides are cooked.
Step 3
Put the sprout and green peas over the fish and bake for another 10 minutes.
Step 4
Fish grilled with sprout, a healthy, And easy to prepare recipe is ready.
Tip
Never stir a fish curry with a spoon. Shake the pot gently to coat the pieces — stirring breaks them apart.
