Elephant Yam Stir Fry | Chena Upperi | Chena Mezhukkupuratti
A simple and easy side dish for rice. Cooked chena is stir fried with coconut mixture and the use of thinly sliced coconut bits increases the taste of the Chena Upperi.
Ingredientsfor 5 servings
- 250 g Elephant yam
- 1 cup Coconut
- 1/2 tsp Turmeric powder
- 3/4 tsp Chilly powder
- 5 Shallots
- Green chily garlic-1 clove
- 1/2 tsp Cumin seed
- 3 Dry red chilly
- 1/2 tsp Mustard
- 2 tbsp Oil
- Curry leaves
- Salt
Preparation
Step 1
For preparing the delicious stir fry, first chop elephant yam, cook it in water with red chilly powder turmeric powder and salt to taste.
Step 2
Coarsely grind grated coconut, green chilly, cumin seeds and garlic in a mixer.
Step 3
Pour oil into a pan and heat it and add coconut bits in it.
Step 4
When it goes golden brown add curry leaves and dry red chilly. Make sure that the chilly is not burnt.
Step 5
Add the ground coconut masala. Stir fry in low flame for a few minutes.
Step 6
Add the previously cooked yam.
Step 7
Mix it well and cook it again for 1 minute.
Step 8
The delicious and nutritious stir fry is ready to serve with rice.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
