Elegant Black Forest Cake
Old-fashioned Kerala sweetmaking — no shortcuts, no substitutes. Jaggery, ghee, and coconut come together through slow cooking and patience into something far greater than the sum of their parts.
Ingredientsfor 7 servings
- Unsweetened Cocoa Powder : ½ Cup
- Butter : 100 gm
- Vanilla essence : 1 tsp
- Water : l/3 cup
- Eggs, at room temperature : 6 large
- Sugar : 1 ½ tsp — powdered
- Cake flour : 1 cup
- Whipping cream, to taste
- Cherry, to taste
- Choco chips, to taste
Preparation

Beat the eggs with powdered sugar.

Set a pan on the stove, add together cocoa powder, butter, vanilla essence and water.
Step 4
Melt the butter, stirring continuously, in lowest flame.
Step 5
Mix cake flour in beaten egg using a spoon (don’t whisk) and the pour the cocoa - butter mix to this. Fold everything together gently.

In a deep oiled pan, pour the batter and cook for 30 - 40 minutes until the nice aroma comes.

Set to cool. And using a wet knife cut from center layer with plain whipping cream.

Layer with plain / cherry whipping creams, cherries and choco chips.

Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
