Elavan Curry
A deeply satisfying elavan curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 8 servings
- 1/2 Pc 1) Ash gourd
- 1 tsp 2) Chilly powder
- 1/4 tsp 3) Turmeric powder
- 4) Salt, to taste
- 1 5) Shallots
- 1/2 tsp 6) Sweet cumin
- 7) Tamarind water of a lemon sized tamarind
- 1/2 Pc 8) Coconut
Preparation
Step 1
Grind shallots and sweet cumin.

Mix ash gourd, chilly powder, salt, turmeric powder and ash gourd together in a.

Vessel. Add enough water and boil.
Step 4
Add curry leaves and mix.
Step 5
Grind the coconut with a pinch of turmeric powder.
Step 6
Mix the grinded coconut and shallots with the boiling curry once the ash gourd gets.
Step 7
Well cooked.
Step 8
Let it bubble for 3-5 minutes more.
Step 9
Serve it with rice.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
