Elaanchi
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 3 servings
- All purpose flour 1 cup
- Coconut half
- Cashew nut 10
- Raisins 10
- Turmeric powder half tsp
- Cardamom powder 1 tsp
- Sugar 1 tablespoon or more
- Ghee, to taste
Preparation
Step 1
Heat a pan add ghee to it and when it melts.
Step 2
Add cashew nut.
Step 3
When its roasted well add raisins and stir it.
Step 4
When the raisins also roasted well, add coconut.
Step 5
Mix it well and stir until it becomes little brown.
Step 6
Next, add sugar to it.
Step 7
Give it a good stir until the sugar gets melted.
Step 8
In a large mixing bowl, and add egg,cardamom powder,4 tsp of sugar or more (as per your taste).

Mix it well.

Add the all purpose flour.

Add turmeric powder.
Step 12
Mix it well.

Add water and make it like dosa batter.
Step 14
Then grind it using a blender.
Step 15
Then take another bowl and filter the batter using a sieve.

Heat a pan and add ghee to it.

Add one scoop of batter to the pan and spread it like dosa.

Let it cook.
Step 19
Get it out from the pan and keep in a plate. Repeat the same with the remaining batter.

Then take one appam and add the coconut mix to it.

Then fold it slowly.
Step 22
And roll it as like meat roll.

Serve it,our elaanchi is ready.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
