Ela Ada
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 4 servings
- 1 cup Raw rice
- 2 cup Coconut — grated
- 1/2 cup Sugar
- 1 tbsp Butter
- Water, to taste
- Plantain leaf — cut into small squares
Preparation
Step 1
For preparing ela ada, first powder the rice in mixer.
Step 2
Boil 1 1/2 cup water with required salt.
Step 3
When the water starts to boil add the rice powder and knead well.(no lumps).
Step 4
Take it off the heat.
Step 5
Get plantain leaf spread little butter. Now spread the rice mixture with hand (thin layer) then spread coconut and sugar.
Step 6
Fold the leaf and arrange all the other leaf in idly steamer and steam for 10 minutes.
Step 7
Ela ada, a Sweet snack is ready.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
