Egg Upperi
Eggs, onion, tomato and other ingredients are fried together to make a tasty egg upperi.
Ingredientsfor 2 servings
- 3 nos Eggs
- 2 nos Onions small
- 1 nos Tomato
- 1 nos Green chilly
- Salt, to taste
- Oil, to taste
Preparation
Step 1
For preparing egg upperi, cut onion, tomato and chilly into small pieces.
Step 2
Heat the oil in a frying pan and add the sliced vegetables, salt and fry till golden brown.
Step 3
Beat the eggs with salt.
Step 4
Pour the beated egg into the frying pan when the vegetables attain brownish colour. Stir it well for 3-5 min.
Step 5
Egg upperi is ready. Serve with chapatti, rice etc.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
