Egg Sandwich Easy
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 5 servings
- 5 nos Egg
- 3 nos Onion
- 2 nos Green chillies
- 2 tbsp Oil
- Curry leaves A, a few
- 1 cup Maida
Preparation
Step 1
Boil eggs.
Step 2
Cut it into two halves and take out the yolk with a spoon.
Step 3
Be careful not to break the white part of the egg.
Step 4
Chop the onions and green chillies into small pieces.
Step 5
Cook the onions and green chillies in oil for about 3 minutes.
Step 6
Add salt.
Step 7
Add curry leaves and Stir everything together thoroughly.
Step 8
Add the yolk and cook it, stirring for about 2 minutes.
Step 9
When cool, make it into small balls.
Step 10
Fill this inside the white part of each half of the egg.
Step 11
Make a thick batter of maida with water and salt.
Step 12
Dip each egg with the filling in the maida batter and fry both the sides.
Step 13
Be careful when you add the salt since you have added salt both in the filling and also in the batter.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
