Egg Ribbon Roll Snack
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 5 servings
- 5 nos Egg Hard boiled
- 2 nos Onion — thinly sliced
- 1 tbsp Ginger and garlic — crushed
- 2 nos Green chilly — crushed
- 1/2 tsp Pepper powder
- 1/4 tsp Turmeric powder
- 1/4 tsp Garam masala
- Salt, to taste
- Curry leaves, to taste
- 1 cup Maida
- Water, to taste
- Oil — for frying
Preparation
Step 1
Warm the oil in a pan and add onion, crushed ginger, garlic and green chillies. cook until it has softened and lightly browned.
Step 2
Next, add pepper powder, garam masala, turmeric powder and salt. cook, stirring often, for a few minutes to remove the raw smell. Add curry leaves and remove the pan from flame. Set aside.
Step 3
In a large bowl, stir together all-purpose flour and salt. Add enough water to make a soft dough that is elastic but not sticky. Knead the dough on a lightly floured surface until it is smooth. Make small balls out of it. Use a floured rolling pin to roll out the balls of dough until very thin like a chappati.
Step 4
Then place 2 tbsp onion masala and a piece of boiled egg in the center and now below make slits on both sides. Continue to fold it like a criss cross.
Step 5
Pour oil into a kadai and heat it and fry both sides until golden brown. Serve the delicious snack with tomato ketchup 😋.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
