Egg Puffs Plain
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 4 servings
- 1 Roll Pepperidge farm brand puff pastry sheets
- 3 nos Eggs
Preparation
Step 1
Thaw the pastry sheet by leaving it out in room temperature for about an hour or so.
Step 2
You can defrost it, using a microwave. But should be careful not to cook it.
Step 3
Boil the eggs and cut them into halves.
Step 4
Spread the sheet and then roll it a bit, so the thickness is half of what it was originally.
Step 5
Cut the pastry sheets into rectangles and place one egg piece in one half of the rectangle and fold the other half over it.
Step 6
Seal the corners by making them little wet.
Step 7
Repeat the procedure for the remaining eggs.
Step 8
Place these on a sheet of aluminium foil in the oven at 375 deg C for about 45 minutes or till they goes golden brown.
Step 9
Turn egg puffs in about 30 minutes.

This egg puffs makes a great and easy snack for parties. :- You can make the potato masala (or left over vegetable fry) that you use for Bondas and stuff the pastry with potato instead of the egg. :- You can fry onions, pepper and ginger garlic and salt and add with the egg to make it with masala.

Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
