Egg Paratha - Healthy
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 2 servings
- For dough
- Wheat flour/ Atta : 2 cup
- Salt, to taste
- Water : for making dough
- Boiled eggs : 2 nos — grated
- Spring onion : ½ cup — chopped
- Boiled and mashed green peas : ½ cup
- Turmeric powder : ¼ tsp
- Jeera : ½ tsp
- Salt, to taste
- Garam masala powder : ½ tsp
- Onion chopped : 1 ½ tsp
- Green chilli chopped : 2 nos
- Some coriander leaves, a few
Preparation
Step 1
Knead the atta using salt and water and set aside.
Step 2
Now green peas boil and mash well.
Step 3
Warm the oil in a pan add jeera and give it a good stir.
Step 4
Add chopped onion and green chilli. Stir for few seconds.
Step 5
Stir in mashed green peas, grated eggs, salt, turmeric powder, garam masala and coriander leaves. give it a good stir.
Step 6
Divide the dough into 4 equal portion, dip in plain atta and rolled out a portions into a circle of 4 diameter.
Step 7
Spread the egg mixture on the top and fold in square.
Step 8
Spread some oil or ghee over the paratha.
Step 9
Remove into a serving dish and serve with tomato sauce or chilli sauce.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
