Egg Molee
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 2 servings
- 4 nos Eggs
- 2 nos Onion — finely sliced
- 1 nos Tomato — finely sliced
- Ginger — chopped
- 3 nos Garlic pods — chopped
- 4 nos Green chillies — slit
- 1/4 tsp Tumeric powder
- Salt, to taste
- 3 tbsp Oil
- 50 ml Thin coconut milk
- 50 ml Thick coconut milk
- Curry leaves A, a few
Preparation
Step 1
Warm the oil in a pan or a kadai.
Step 2
Add onion, ginger, garlic, green chillies and curry leaves and fry, till they turn soft.
Step 3
Add turmeric powder and salt.
Step 4
Add thin coconut milk and allow it to boil.
Step 5
When it starts boiling, break the eggs into it one by one and cover it with a lid to set.
Step 6
Once the eggs are cooked, add tomato and thick coconut milk.
Step 7
Simmer for 2 - 3 minutes.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
