Egg Masala - Very Simple
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 4 servings
- 4 Eggs hard boiled, shelled and cut in half
- 1 nos Onion finely sliced lengthwise, large
- 1 nos Tomato — diced
- 1 sprig Curry leaves
- 2 nos Green chillies — slit
- Ginger garlic paste - 1 tsp
- Cinnamon two 1 inch sticks
- 6 nos Cloves break the heads
- 1/2 tsp Fennel seeds (Perumjeerakam)
- 1/2 tsp Poppy seeds , Kashakasha — optional
- 1 tsp Sambar powder
- 1/4 tsp Turmeric powder
- 1/4 tsp Garam masala
- Salt, to taste
- 2 tbsp Oil
Preparation
Step 1
Warm the oil in a wok. Add poppy seeds and fennel seeds.
Step 2
When the poppy seeds stop allow to crackleing, add the onion, green chillies and curry leaves. cook until the onions start turning golden.
Step 3
Add ginger-garlic paste and cook until nice aroma arises.
Step 4
Add the diced tomatoes and Put the lid on and cook on low heat till they turn pulpy.
Step 5
Add the sambar powder, turmeric, garam masala and salt. Stir everything together thoroughly. Put the lid on and cook for a few minutes till the raw smell of the powders disappear.
Step 6
Once all the water from the tomatoes evaporate, add the halved eggs and cook for a few minutes.
Step 7
Remove from fire and serve with any kind of variety rice or curry rice. Happy cooking :).
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
