Egg Kothu Porotta | Egg kothu Parotta
Soft, layered, and golden from the griddle — this egg kothu porotta is the perfect vehicle for scooping up thick curries and gravies. The dough rests until pliable, then gets cooked until each layer separates.
Ingredientsfor 2 servings
- 3 nos Porotta fresh or frozen, shredded into bite sized pieces
- 2 nos Onion — finely chopped
- 1 nos Green chilly — sliced
- 1 nos Tomato — finely chopped
- 1/2 tsp Red chilly powder
- 2 nos Eggs
- 1/4 tsp Black Pepper Powder
- Curry leaves, a few
- 1/4 cup Chicken/mutton gravy
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing, first beat the eggs with chicken/mutton gravy and set aside.
Step 2
Next, heat an iron skillet and pour some oil. Add chopped onions, green chilly, curry leaves and cook for a few minutes until the onion becomes golden brown.
Step 3
Stir in chilly powder, pepper powder and Stir everything together thoroughly.
Step 4
Add chopped tomatoes and keep sautTing until well blended.
Step 5
Clear the middle portion of the skillet and pour the beaten egg. Add required salt and Fold everything together gently.
Step 6
Stir in shredded porotta pieces and Stir everything together thoroughly till blended.
Step 7
A mouth-watering South Indian dish, is ready. Serve hot.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
