Egg Fish Fry(Meen)
Pan-fried until the edges go dark and crispy, this fish fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- Fish : 4 — cut into thin strips
- Egg yolk : 1 no
- Coriander leaves, a few
- Ginger Garlic paste : 1 tsp
- Salt, to taste
- Chilly powder : 1 tsp
- Oil : to fry
- Bread crumbs : to dust
Preparation
Step 1
Cut the fish into thin strips.
Step 2
Mix together egg yolk, coriander, ginger garlic paste, chilly powder and salt.
Step 3
Immerse the fish into the mixture and let it marinate for half an hour.
Step 4
Dust it on the bread crumbs.
Step 5
Heat oil and fry till both sides are done and serve hot.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
