Egg Cutlet
Deep-fried until the outside shatters at the first bite and the inside stays soft and flavourful. A tea-time favourite across Kerala, especially when the monsoon rain is hammering the roof.
Ingredientsfor 10 servings
- 5 nos Hard boiled eggs
- 2 nos Potatoes medium
- 1 nos Onion finely chopped, big
- 6 - Green chillies
- 2 tsp Garlic paste
- Ginger A small piece
- 1/2 tsp Pepper
- Salt, to taste
- Curry leaves A, a few
- 1 nos Egg beaten
- 1 cup Bread crumbs
- Oil — for frying
Preparation
Step 1
Cook potatoes well and drain the water.
Step 2
Cut the eggs into halves and remove the egg yolks.
Step 3
Warm the oil in a pan.
Step 4
Cook onion, green chillies, garlic, ginger and curry leaves, till brown.
Step 5
Mash the potatoes and add to the pan along with salt and pepper.
Step 6
Let it cook for 2 minutes and take it off the heat.
Step 7
Add the boiled egg yolks to the pan and Stir everything together thoroughly.
Step 8
Get an half of boiled egg white and fill it with the potato, egg yolk mix and press well.
Step 9
Dip the cutlet in the beaten egg and roll it on the bread crumbs.
Step 10
Fry in hot oil in oil.
Step 11
Garnish with onions and mint leaves.
Step 12
Refrigerate the cutlets for 1 day before frying. The cutlets won`t break.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
